Inspired by my grandmother's pie recipes, this recipe for no-bake graham cracker bites combines dried fruit and nuts with graham crackers and marshmallows for a punch of energy that takes no time or baking expertise to make. Keep these on hand for when you need a snack for yourself or for the kids.

FUN DESSERT IDEA: These rolls have an almost cookie-dough like quality, rolling the dough into little balls and mixing them into vanilla ice cream is a simple way to make gourmet ice cream at home!

No Bake Graham Cracker Pie Rolls


  • 12 honey graham crackers
  • 1/2 cup chopped pecans
  • 2 cups mini marshmallows
  • 2 cups dried fruit, finely chopped ( I used dates and candied orange peel)
  • 1/2 cup to 2/3 cup heavy cream


  1. In a food processor, pulse the graham crackers into fine crumbs. Reserve 2 tablespoons of the crumbs for coating.
  2. In a large bowl, combine the graham crackers, pecans, marshmallows, and dried fruit, and toss to coat them in the crumbs.
  3. Add the heavy cream a few spoons at a time, mixing well after every addition.
  4. When the mixture is wet enough to hold it's shape when pressed, divide the mixture and form into two logs over top of wax paper or cling wrap.
  5. Coat each log in the reserved graham cracker crumbs, and wrap tightly, twisting the ends to make sure the logs will hold their shape while chilling. Chill for 4-6 hours.
  6. After the logs have chilled, slice them into cookies with a very sharp knife. Keep in the fridge in an airtight container for up to 1 week.
